Customer Review: A Wonderful CARBON FILET Knife

... explain that this knife is very thin and flexible - used for slicing only it is perfect. It can't be twisted; you should not try to carve with it. As for the complaint from the first reviewer: carbon steel discolors - his other knives are Stainless. There's a big difference. Carbon steel knives need more frequent sharpening, but take a finer edge.
Description of Sabatier Au Carbone 6-Inch Carbon Steel Filet Knife
An excellent knife maker, Sabatier is one of the few companies left that still make a line of pure carbon steel blades--they take a sharp edge better than any other material. For many chefs, this sharp edge more than makes up for minor discolorations that occur with age. The extremely flexible blade on this filet knife makes it an excellent choice for working with fish or other delicate meats that need to be deboned or sliced thinly. It's also great for working around fruit cores and for various vegetable slicing and peeling tasks. When you take it to get sharpened, verify the sharpener knows how to handle carbon steel--it's a bit different than regular stainless, and you'll want to take full advantage of its special sharpening properties. --Jill LightnerBoning & Fillet Knives
